Lentil cakes or balls

Lentils are legumes rich in fiber, in group B vitamins (highlighting folic acid) and in minerals such as phosphorus, potassium, magnesium, calcium, iron and zinc.

When you accompany them with some cereal (rice, corn, etc.), they generate a protein of high biological value (similar to meat) because their amino acids complement each other.

If you additionally consume a fruit or vegetable rich in vitamin C such as tomato, guava, orange, tangerine, lemon, paprika, among others, the absorption of iron in lentils is enhanced. This is what is called Food Synergy.

Next learn a different way to consume lentils. This is an excellent option to offer it to babies because they can take them with their little hands. Just remember not to add salt in preparations for babies under 1 year of age.

Ingredients

2 cups of cooked lentils

1 paprika

1 white onion

coriander sprigs

3 garlic cloves

2 egg yolks

1 cup breadcrumbs (can be substituted for oatmeal or wheat flour)

Pepper, cumin, oregano, Salt to taste.



Preparation

Cook the lentils until they are soft and reserve them without removing the water. Finely chop the onion, paprika, garlic and coriander and fry them in the oil. When the onion is transparent, add the drained lentils. Season with salt, pepper, cumin and oregano to taste and cook over low heat for 5 minutes. Blend the previous preparation until a pasty mass is obtained. In a container, we mix the paste obtained, with the egg yolks and breadcrumbs, oats or wheat flour according to choice and knead. We form cakes or balls according to the presentation we want. We can fry them in a frying pan with a little oil or take them to the oven until they are golden brown and firm.

FOR CHILDREN UNDER 1 YEAR

Make the balls and cakes of a size that is safe and easy for the baby to grasp. Remember not to add salt.
